HAVANA, Cuba, Feb 9 (ACN) From Mississippi to Gloria City: US influence in Cuban cuisine is the title of a book to be presented by Extramuros Publishing House during the 26th International Book Fair in Havana.
The book by Fernando Fornet Pina, engineer and researcher in national and international cuisine will launch the book on February 17th at Pabellon Cuba Exhibition Center in Havana.
In statements to ACN, Fornet said that the name of the book is related with the arrival of the first foreign communities and the imprint of US good on the island.
The book includes among others, recipes and the concept of the word vianda, yucca, and the reader that works at the tobacco factories, rum, food conservation and manufacturers, cake in home festivities, fast food, sandwich, apple pie, cocktails and coffee.
The book is an excellent investigation on the impact of US cuisine in the island's food culture demonstrating that it has been enriched from all over said Jose Vega Sunol, PhD in History Sciences, professor and researcher of the Center of Culture and Identity Studies of the Humanities Department of the University of Holguin.
Fornet Pina, originally from the province of Holguin has 20 books on cuisine, is brother of Juan Jose, one of the expeditionary of the Corynthia yacht leaded by Calixto Sanchez White which were surprised and massacred at the Sierra del Cristal on May 28th, 1957.
Extramuros Publishing House belongs to the System of National Territorial Editions known as Riso and founded in 1976, one of the oldest in the country.
The 2th International Book Fair will begin on Thursday in Havana and will run until February 19th in its main headquarters which is the San Carlos de la Cabana Fortress and Canada is guest of honor.
